Caroline Haskins

As a home economics educator and food demonstrator, Caroline Haskins traveled the islands teaching practical wartime cooking and food conservation strategies. She held public classes on how to substitute wheat, sugar, and meat—then in short supply—for local and seasonal ingredients. Sponsored by the Territorial Food Commission, Haskins helped empower women across economic classes to feel that their domestic work was a patriotic contribution. Her workshops were widely attended and frequently featured in local newspapers.
